Traditional Vietnamese Pho 

Ingredients for broth:

  • 6 Star Anise
  • 12 Cardamom Pods
  • 2 Cinnamon Sticks
  • 12 Cloves 
  • 12 Coriander Seeds
  • 6 L Beef Stock
  • 4 T Fish Sauce
  • 4 inch piece of ginger
  • 1 C Onions (green are traditional, but use any kind)
  • Lime
  • Bunch of Bok Choy (optional)

Ingredients for noodles and garnish:

  • Thai Chillies
  • Coriander (cilantro for you American folks)
  • Thai Basil
  • Bean Sprouts 
  • Lime wedges
  • Pad Thai noodles

Step One

Heat beef stock and add star anise, cardamom pods, cinnamon, cloves and coriander seeds.  Bring to a boil then simmer until fragrant.  Add the juice of a lime and fish sauce.  Simmer for 2-3 hours (the longer, the better).  

Step Two

Strain out the seeds, chilly, and  ginger with small hand-held strainer. The ginger should be soft and nice to eat. Add onions and bok choy and simmer until soft.

Step Three

Prepare noodles and place in the bottom of bowls. Pour broth over the top and garnish with coriander, thai basil, bean sprouts, and thai chilly. Feeds four.
